What is a paring knife actually used for?

A paring knife is a short-bladed knife β€” usually 7 to 10 cm β€” used for detail work that a large knife is too clumsy for: peeling, coring, trimming, deveining and decorative cutting. The Stahl Talon Paring Knife has a 3.5 inch / 9 cm blade with a fine point, which puts it squarely in the standard paring range.

The length is the whole point. Nine centimetres is short enough that you can hold the blade in your palm and work a fruit against your thumb β€” the way you'd peel a mango standing over the sink β€” but long enough to run through a small potato in one pass. Longer than that and you lose tip control; shorter and it stops being useful for anything but garnish work.
